Pesto

The biggest garden I ever tended had twenty large raised beds. Each summer, at least one was packed with lush, leafy green basil plants. Come harvest time, when I pulled up the plants and pinched the leaves off the stems, the tips of my fingers turned nearly black from all the oil they contained. A first of the season pasta with pesto dinner marked the harvest. That dinner is so easy it doesn’t really need a recipe. Just cook up your favorite pasta in a big pot, drain, rinse briefly so it won’t stick together, place some pasta on each plate, and pass the pesto. Pesto can be used to flavor so many things. A spoonful is an excellent topping for eggs, delicious drizzled on top of ripe tomato slices, and can even be used in place of mayonnaise in sandwiches.
